Sick Toddler

Well, I had ideas for today’s post, but Bubs has a cold. For those of you who do not have kids or your kid hasn’t been sick yet, basically what that means is that the whole night & day revolve around your sick child.

Poor Bubs, of course there isn’t much I can do for him, and he doesn’t understand why he doesn’t feel good. 😦

He went to bed last night as normal, then starting at 10:45 pm, he woke up EVERY hour until about 5:45, then he slept about 2 1/2 hours and we’ve basically been up since. (For those of you who do not have kids, that means this Momma was up every hour as well).

His nose is so stuffed up, I got about a 25-30 min nap out of him earlier. Which was about enough time to drink a cup of coffee, then his congestion woke him up.

I tried to give him a bath after his short nap, normally he LOVES bath time, but not today. He screamed the entire time. At least he was clean for a few mins, the slobber & snot seem to be never ending. After his brief bath, he ate a snack of crackers & a banana. The rest of the afternoon has consisted of this…

It’s only 2:45… I am exhausted and so is he! I thawed a jar of my homemade organic chicken noodle soup for him to eat later, hopefully that helps a little.

I guess my blog ideas will have to wait until tomorrow. I’m off to warm up my cup of coffee for the 4th time today.

Yummy Zucchini “Pasta”

I am so sorry for being MIA! Bubs has recently reached his “needy” stage. I was kind of hoping he would never have one! (Wishful thinking, I know!)

Here is our healthy, 100% Organic lunch! Bubs & I both LOVED it! And we finished it all!! This “pasta” bowl is made with organic zucchini, organic red pepper, organic onion, organic garlic, organic mushrooms, and organic extra-virgin olive oil.

How did I make the “noodles” you ask?? I bought one of these handy spiral cutters on Amazon.

My mom had this spiral cutter this summer while we were up north, she made us zucchini noodles, they were great! So I decided to buy the same cutter. Today is the first time I have used it! Great results, I definitely recommend it!

Onto the steps of our lunch…

First I washed the zucchini and used my potato/carrot peeler and peeled “Stripes” into the zucchini.

Then, I spun the zucchini into the spiral cutter, this is what is left of the zucchini afterwards.

This is what 2 zucchinis look like, after being “spun” thru the spiral cutter.

Then I cut up some organic mushrooms, organic onion, organic red pepper and organic garlic, I dumped them all into my stir fry pan (which, I LOVE by the way!) and added my organic EVOO…I let these sauté a bit before adding the zucchini noodles.

Once I added the zucchini noodles, I sautéed for just a few mins, then poured into a large bowl, Bubs and I ate them just like that, no seasoning, or anything (none needed, really!).

Ingediants:

2 Organic Zucchini (About medium size)

1/2 Organic  Sweet Onion

3 Cloves Organic Garlic (chopped finely)

4 Organic Mushrooms, cut into strips

1/2 Organic Red Pepper, cut into strips

1-1 1/2 TBSP Organic Extra-Virgin Olive Oil

Heat oil in wok or large sauté pan, dump onion, garlic & red pepper in, sauté about 4-5 mins, add mushroom slices, sauté about 2 mins, add zucchini noodles, sauté about 2-3 additional minutes or until noodles are tender, pour into bowl & enjoy!!

Maybe next time I will try some different seasonings, or parmesan cheese…. I can’t wait to try other veggies!!

Spaghetti Squash

This past Saturday we took a family trip to the Farmer’s Market. I love the market in the fall! There are always so many more options! Plus fall decorations are available as well!! One of the things I bought on Sat was this gorgeous spaghetti squash. I can’t wait to cook it! I have found so many recipes on Pinterest, I can’t decide which one to try first!

Farm Fresh

Wow! I meant to get back to my posts as soon as we returned from our Labor Day weekend trip, but time just got away from me! I am so sorry!! I am not sure why it always takes so long to get back to your normal rhythm after vacation!? (It seems even harder with a child…) Well, here is my next post, I hope you all enjoy!

In my opinion, nothing beats fresh fruits & veggies straight from the farm!! Not only do they taste better, they are more nutritious that way (because they are so fresh!). There are many reasons they are more nutritious for you, they are super fresh, so they are at their peak for nutritiousness; they have less pesticides because the goods are local and do not need to travel far; some are USDA Organic; and some do not use pesticides, but did not get the USDA Organic certification. Of course not everyone can be a farmer, but most of us can visit our local Farmer’s Market! Another option is to join a local CSA!

Do you know what a CSA is? CSA stands for Community Supported Agriculture. Many of those farmers at your local Farmer’s Market may offer a CSA membership. They can be quite pricey and your weekly fresh food variety & quantity varies from week-to-week. If you are a veggie lover, you can probably use them all, but if you are a picky veggie eater, it may be hard to use everything. My parents belong to a local CSA, we alternate (between my parents, my brother & sister-in-law, and me) who picks up the veggies each week. It works out nicely, because between our three families, someone usually eats what veggies we get. This was my most recent pick-up!

The CSA we belong to is Stone Coop Farm, they are out of Hamburg Township, MI. If you are local to that area, you have probably seen them at the Brighton Farmer’s Market. If the idea of joining a CSA sounds good to you,  you can search for a local one here. Some CSA’s offer a local drop-off in your area, at Stone Coop Farm, we have a time & day to go to the farm and pick our veggies up. This year they have been offering organic eggs, which are amazing! The quantities are limited, so they ask that you order ahead of your pick-up day & time to ensure you get some.

Eating lots of fresh fruits and veggies is important to me & my family. I try to buy organic whenever possible (more on that later), and try to make sure the hubby & Bubs get their suggested servings each day!
